Founded in 1789 in the middle of the Edo period. The specialty is mirin (sweet sake) pickles of melon, cucumber, watermelon, and Kamo eggplant, which are popular among famous ryotei (Japanese-style restaurants). The sake lees from several breweries, mainly in Fushimi, are blended with mirin (sweet sake) lees to give the pickled vegetables a more mellow, deeper flavor than the typical Nara-azuke. The new item, Butter Sandwich, is exploding in popularity.
