Original Miso that shines with craftsmanship.

The rich and deep miso soup is made with our original blend of Miso, which is carefully strained by hand one by one. The use of grated garlic from Aomori Prefecture gives it an aroma that makes you want to eat it again. Add the season’s best vegetables and motsu of Japanese black beef, then Ichifuji’s miso motsu-nabe is completed.

 

The supreme soy sauce with a condensed umami.

Soy sauce motsu-nabe is well known for its round aroma and smooth texture. We make the umami broth every day from kelp and dried bonito flakes that have been soaked for a day and blend it with soy sauce. The garlic used in the motsu-nabe is sliced in-house after purchase. The secret to the deliciousness of Ichifuji’s food is the meticulous attention to detail that changes the way it is prepared based on the characteristics of the ingredients and seasonings.


Every step of the process is passionately done by hand.

In pursuit of the ideal flavor, we do all the cooking by hand, and we place great importance on this seemingly roundabout process. By putting all our love and care into this process, we are able to create a truly delicious nabe.
